About the client
After building a loyal following through markets and pop-ups across Sydney, Mori Matcha Bar settled into its first permanent home in the foodie-inspired “Hometown” precinct of Melrose Central shopping centre in Melrose Park. Every drink in their signature menu is treated as a small ritual. Using the traditional Japanese paste method, the team whisks each cup by hand to order.
Project Overview: A Specialty Matcha Bar at Melrose Central
In August 2026, Regiment Workshop completed the interior and exterior fitout of Mori Matcha Bar inside the exciting new “Hometown” precinct. The precinct is foodie-inspired, and spans the ground floor of the shopping centre.
The fitout brief called for a considered, authentic environment that expresses the Japanese roots of Mori Matcha Bar. We answered it through careful joinery, refined finishes and a restrained material palette. The result is a warm, eye-catching presence within a busy food & beverage precinct.
Natural Materiality and Joinery
Warm, natural timber sets the tone for the fitout. The front counter is clad in an elegant timber lattice inspired by traditional shoji screens. The rhythm of its vertical and horizontal members gives the frontage depth and a strong sense of traditional heritage.
Behind the service area, the rear wall is lined with deep green, glossy glazed tiles laid vertically, adding richness and colour. Mori translates as “forest” in Japanese, and the pairing of timber and green quietly echoes the name.
Canopy and Spatial Composition
Above the counter, a fluted timber canopy of fine vertical battens wraps the shopfront and defines Mori Matcha Bar as a distinct, pavilion-like structure.
The counter itself is planned as an open, angled form that presents several faces to passing customers and keeps the service area visible. The canopy also creates an intimate, sanctuary-like feeling at the point of service. Its ribbed texture is a natural counterpart to the lattice below.
Custom Displays and Cabinetry
A timber-framed glass display cabinet sits within the pale grey-stone benchtop. Its interior is softly lit, so the featured items are presented with a gallery-like clarity.
On the wall behind, a grid of recessed openings is set into the timber panelling. Each opening is backed with the same green tile and sized to display Mori Matcha Bar’s ceramic tea bowls.
Integrated Lighting
Lighting is treated as part of the architecture. Continuous warm LED strips run beneath the counter edge and within the recessed openings, accentuating the grain and texture of the timber.
The fluted canopy is also edge-lit along its upper line. Illuminated three-dimensional lettering and a backlit logo panel give the matcha bar a clear identity amongst the other shops on the Ground Floor of Melrose Central.
